Carrot, zucchini, potato and mint patties

Ingredients
- 1 medium carrot
1 medium zucchini
1 medium potato
1/3 cup ricotta cheese
1 egg, lightly beaten
1 teaspoon mint, fresh, finely chopped
pepper, to taste
3 tablespoons olive oil
1/2 cup flour, extra (to roll patties prior to cooking)
Cooking method
-
1. Wash vegetables
2. Grate the carrot, zucchini and potato.
3. Mix the vegetables, ricotta cheese, egg, flour, mint and pepper.
4. Roll a teaspoon of the mixture into a patty shape and roll in extra flour.
5. Heat the oil in a frypan.
6. Cook patties in the pan for 2-3 minutes or until golden brown.
7. Turn to the other side and cook for a further 2-3 minutes or until golden brown.
Notes: Serving: May be served with barbeque, tomato or chilli sauce.
