Fruit cake with cinnamon

Ingredients

  • 1 cup carrot, grated
    1 apple, peeled, cored and finely diced
    1/2 cup sultanas
    1/2 cup dried apricots, diced
    3/4 cup water
    1/4 cup apple juice
    1/4 cup orange juice
    1/4 cup raw sugar
    1 cup white self raising flour
    1/2 cup plain white flour
    1 teaspoon bicarbonate of soda
    2 bananas, mashed
    1 teaspoon Dutch cinnamon

Cooking method

    1. Combine apple, carrot, sultanas, apricots, water, juices, cinnamon and sugar in a large pot. Bring to the boil, then simmer for 15 minutes. Allow to cool.
    2. Fold in the sifted flours and bicarbonate of soda.
    3. Add bananas and stir through.
    4. Pour into greased or lined tin. Bake at 180˚C for 50 to 60 minutes or until cooked.
