Cabbage, tuna and corn fritters

Cabbage, tuna and corn fritters

Ingredients

  • 200 g can tuna in springwater, drained
    1/4 cabbage, thinly shredded
    2 spring onions, finely sliced
    1/3 cup self raising flour, sifted
    310 g can cream style corn
    2 eggs, lightly beaten
    1/4 cup reduced fat milk
    canola oil spray, (or olive oil spray)

Cooking method

    1. Mix tuna, cabbage, spring onions, flour, corn, eggs and milk in a large bowl.
    Let stand for 10 minutes.
    2. Spray non-stick frypan with oil and place over medium heat.
    3. Place tablespoons of the mixture in heated frypan. Fry until golden on both sides.

Notes: For smoother texture, all ingredients can be blended in a food processor before frying.
