Muffins - chocolate banana

Chocolate banana muffins

Ingredients

  • 3 large ripe bananas
    1 1/2 cups wholemeal self raising flour
    1/4 cup self raising flour
    3 tablespoons cocoa
    1 teaspoon baking powder
    2 teaspoons mixed spice
    1/2 cup sugar
    1/3 cup natural yoghurt
    3 eggs, beaten
    2 tablespoons vegetable oil, for greasing tins

Cooking method

    1. Preheat oven to 180˚C.
    2. Remove the skins from the bananas and puree them in a food processor.
    3. Place all the other ingredients in a large mixing bowl.
    4. Add the banana and stir with a wooden spoon.
    5. Place 1-2 tablespoons of mixture into greased mini muffin tins and bake for 10 minutes or until muffins are cooked when tested with a skewer.
