Gnocchi - Nicola potato

Ingredients
- 1 kg nicola potatoes, (approx) washed, not peeled
1 egg, free-range
250 g flour, (approx) plain
1 salt, pinch
Cooking method

1. Place potatoes in pot of cold water, bring to the boil and simmer until cooked. Strain potatoes and peel while still hot.
2. With a mouli or potato masher, mash potatoes onto a bench top. Add flour, salt and egg and mix gently until just combined and dough is slightly springy (Add more flour if necessary).
3. Divide dough into 6 and roll into long cigar shapes. Cut into 3 cm lengths and roll on patterned block, grater or fork to shape gnocchi.
4. In a large pot of boiling salted water add the gnocchi and stir gently. The gnocchi will be cooked when it floats to the top. Remove gnocchi from the pot.
5. If you are not using gnocchi immediately, place in iced water, drain and refrigerate for up to 3 days.) Serve with Napoli sauce and salad.
Notes: To make tender gnocchi it is important not to use more flour than necessary. The variety of potato used is also important, as it will affect the final texture. Nicola potatoes are readily available but otherwise look for a high starch variety of potato.
