Ingredients
- 20 g reduced-fat polyunsaturated margarine
300 g self raising flour
20 g sugar
150 g sweet potato, boiled then mashed
1 egg, beaten
20 ml low-fat milk
20 ml low-fat milk, for glazing
Cooking method

1. Heat oven to 220C. Rub margarine into flour using fingertips. Stir in sugar, sweet potato and egg. Mix with sufficient milk to form a soft dough.
2. Place onto a lightly floured board and knead until smooth. Roll out until 2 centimetres thick. Using a knife, cut into 12 scones. Arrange scones on an oven tray and glaze tops with milk.
3. Bake in oven for 10-15 minutes until golden brown. Let cool. Serve with reduced-fat cream or low-fat natural yoghurt.
