Salad - savoury fruit and barley

Ingredients

  • 1/4 cup slivered almonds
    1 cup quick barley grain, (see Notes)
    2 tablespoons lemon juice
    2 tablespoons canola or olive oil
    1 tablespoon chutney
    2 teaspoons curry powder
    1 small carrot, grated
    1 medium apple, finely chopped
    1 cup chopped pineapple
    1 small red capsicum, finely sliced
    1 small green capsicum, finely sliced
    1/4 cup chopped raisins
    1/4 cup chopped walnuts
    mignonette lettuce leaves

Cooking method

    1. Toast almonds on oven tray in moderate oven (180°C) for 5 minutes or until a light golden colour.
    2. Add barley gradually to large saucepan of boiling water. Boil uncovered 20 minutes or until barley is tender. Drain and rinse under cold water.
    3. Combine barley with remaining ingredients, except lettuce, and chill. Serve on lettuce-lined platter.

Notes: Barley grain can be obtained in health food stores or in the heatlh section in the supermarket.
To complete the meal serve with grilled fish, meat or chicken.
